2018 ROSÉ

Tasting Notes by Jim Gerakaris, CWE – JUSTIN Winery Sommelier

Appearance: Bright, clear with a light salmon color and coppery secondary highlights.

Aroma: Aromatic with red delicious apple, muled strawberry, cherry snd tropical fruit character, chamomile, subtle purple floral notes and hint of white pepper.

Palate: Dry, medium0-bodied with red berry, apple and white cherry fruit on the entry and subtle chamomile flower notes and emerging on the fresh, textured mid-palate. The finish is moderately long, finely textured and refreshing with lingering red fruit and savory herbal elements. Not just for summer, the JUSTIN 2018 Rosé is a great go-to wine that pairs well with a wide variety foods, like a bacon, lettuce, tomato chopped salad, roasted chicken with herbs and garlic, or rigatoni with a Bolognese ragu.

2018 SAUVIGNON BLANC

Tasting Notes by Jim Gerakaris, CWE – JUSTIN Winery Sommelier

Appearance: Clear, bright, pale straw with silver highlights.

Aroma: Aromatic with ripe lemon, pear and a tropical fruit, mixed with savory herbal notes and acacia flower accents.

Palate: Dry with moderate-plus body, a fresh burst of lemon lime and green apple on the entry becoming more complex toward the mid-palate with white pepper, green herbs and floral notes as the palate unfolds. The finish is crisp with sustained citrus and tropical fruit balanced by savory fresh cut herbs, a subtle white pepper accent and a pleasing mineral texture. It’s a perfect match to a cool summer soup like Gazpacho, or its Andalusian relative, Salmorejo made with fresh olive oil. It’s also great with grilled oysters with an herb compound butter, or a salad of mixed greens, pears and walnuts with fresh goat cheese. This is Sauvignon Blanc at its best; palate-cleansing and refreshing, textural, with a balance of complex fruit, herbal highlights and savory flavors.

Palate: Full-bodied with concentrated ripe black cherry, cassis and boysenberry jam on the entry, layered with toasted vanilla, cinnamon, and licorice spice. Classic cabernet savory notes emerge on the mid-palate with dark chocolate, coffee and minty accents. The finish is extremely long, balanced and fresh, with continued layering of black fruit, cherry candy and spice elements all framed perfectly with mouth-filling but very fine tannins that surround and support the wine’s flavorful core. Drinking well on release, the 2012 ISOSCELES will continue to develop in bottle showing further complexity, grace and precision as its elements continue to interact. A perfect accompaniment to hearty meat dishes like braised beef ribs, a ribeye steak right off the grill, or just on its own.
